Initial Preparation:
- Start with a 2.5 pound rack of loin back ribs
- Take membrane off the back of the ribs – they use a flat head screwdriver
- Prepare the dry rub
- Sprinkle the ribs on the tops and bottoms with dry rub.
- Add the brown sugar to the meaty part of the ribs so the ribs are sealed in with brown sugar.
- Wait for the brown sugar to melt on top of the meat.
- Add a little more rub on top of the brown sugar
- Mix up a sauce for the end with apple jelly and apple cider vinegar.
Smoker Preparation:
- Set smoker to 250 degrees
- Make sure you have apple wood available for the smoke
Put the BBQ ribs in the smoker and leave the cover closed for 60 minutes. At the end of the first 60 minutes open the lid and mop the smoked bbq ribs with your favorite mop sauce, or the one they use – Mississippi Mud Sauce. Do this every hour on the hour mark for the next three hours.
At the end of the 4th hour you should be ready to dig in and eat the smoked bbq ribs! Let us know how these work for you and share some pictures too!
