The best part of any smoke is carving the meat to eat! The cook mentions that he used an oven back, then plastic wrap and finally aluminum foil to wrap the brisket at the end of the smoke. Do you do this too?

He also mentioned that he smoked the brisket fat side down. Which way do you smoke briskets?
