Hardwood Charcoal Grilled Salmon & Kebobs

Hardwood grilled smoked salmon! It sure looks good to me. The cook really likes his digital thermometer. I wonder if he used it for the kebobs too. What are your thoughts on digital thermometers? Do you use one?

This smoker is making a case for using hardwood charcoal instead of briquets in his grill. Which do you think is better, and why?
