What do you use to light your charcoal?
If you’re not an experienced smoekr, this might be difficult if you are preparing a nice dinner for company. Smoking a 18 lb turkey might take 12 hours at 200 degrees f. The challenge is keeping the temperature at 200. The other challenge is ..Is your grill big enough to keep the turkey away from the direct heat and yet still enough room to make a fire that will keep things at 200 degrees. And, if you live in a cold part of the country, keep in mind you will be adding fuel every 1/2 hour or so for that entire 12 hour period. make sure you have a thermometer to measure the temperature inside the grill. Optimally, keep the temperature between 185 and 225 (in the middle if possible) Good luck with your venture and happy thanksgiving
