Bacon Wrapped Meatball Stuffed Onion Recipe
The BBQ Pit Boys walk you step by step through the process of making incredibly delicious bacon wrapped fresh sweet onions packed with meatballs.
Start out by coring the onions, because that’s where the meatballs are going to go! Slice off the ends, remove the outer skin and simply carve out the middle. A kitchen spoon will help to get as  much of that tasty onion out as you can.
Make the meatballs with any of the extras you like, but make sure to add some seasonings and the leftover onion for flavor. Don’t skimp on the beef either, it’s the most important part of the recipe.
Make the meatball and stuff it right into the middle of your onion, making sure it fills up the whole core. Use up all your onions, then take your bacon and wrap the entire onion -regular cut works best.
Time for the grill, which should be set up for indirect heating – hot charcoal on one side, food on the other. Cook them at 250 to 275 degrees Fahrenheit for about two hours. Take some barbecue sauce and add brush on top, then add some cheese on top and grill for another 10 minutes. Pull those off the grill and it’s time to feast!
