Grilled Jamaican Jerk BBQ Chicken Recipe
If you love hot and spicy there is no tastier dish that you can make on the grill than Jamaican Jerk BBQ Chicken. While not difficult from and ingredient standpoint it will take about 6 hours to marinate and then make. It’s a good dish to prepare in the morning and grill for dinner.
INGREDIENTS
- 2 tbs ground thyme
- 1 tbs ground rosemary
- 1 tbs ground allspice
- 1 tbs ground ginger
- 1 1⁄2 tbs sea salt
- 1 1⁄2 tsp onion powder
- 1 1⁄2 tsp black pepper
- 1 1⁄2 tsp ground cinnamon
- 3⁄4 tsp ground nutmeg
- 3⁄4 tsp garlic powder
- 3⁄4 tsp paprika
- 2 tsp ground habanero peppers
- 12 bay leaves crumbled
- 1⁄3 cup sugar
- 3 lbs chicken (pieces, wings, breasts, thighs)
- 1 juice of one lime
- 1⁄4 cup olive oil
DIRECTIONS
- Combine all but chicken, lime juice and oil in mixing bowl and whisk to mix well.
- Whisk together lime juice and olive oil.
- Rub chicken well with lime/oil mix. Do not marinate.
- Use a spice sprinkler to coat the chicken with the dry seasoning and spice mixture. It is not meant to be a rub but instead a coating.
- Refrigerate 1-3 hours, then remove from refrigerator and allow to come to near room temperature.
- Prepare grill for direct/indirect grilling.
- Grill chicken over hot direct fire. Don’t worry about the black, it’s supposed to be there. In fact, 30-40% of the skin should end up black.
- Once seared, remove to the indirect heat area of the grill and cook to 165 degree F internal temperature.
