How To Use the 3-2 Method for Smoked Chicken

You’d think that smoking a chicken for 3 hours and then baking it in the oven for an additional 2 hours would make for a dry, overdone chicken.  This doesn’t seem to be the case! Instead, the chicken ends up really tender and succulent.

Go ahead, give it a try. Any suggestions on how to get similar results without using the over?
