Like many others this BBQ maven has discovered the joys of brining poultry. This chef shows how to smoke two whole chickens that will yield a juicy, flavorful meal. He starts by brining the chicken in a mixture of 3/4 cup of salt, 1/4 cup of sugar and 1 gallon of water. He mixed this up and put one chicken in each zip lock bag and added the brine mixture to cover the chicken. He then refrigerated the chickens for four to six hours at less than 35 degrees to get the mixture to work. This brine mixture lets the chicken absorb additional liquid and helps it steam from the inside while its on the smoker. He is using an offset smoker which means that the grill portion will only get the heat and the smoke. The offset part of the smoker is where the fire and the smoke are generated.
