Vertical Rib Racks Give More Ribs per Smoke

Vertical smokers don’t have a lot of space in them for laying out racks of ribs. Some folks fix this by rolling up their ribs and then securing them with bamboo sticks or string. Others use vertical rib racks.

We like using a pork vertical rib rack because it gives the meat the greatest exposure to the smoke and the heat. It also seems to cook more consistently. Better yet, when using a pork rib rack you can get more racks of ribs on the smoker every time you make them. Each rack equals more ribs and more good eats!

What do you prefer – laying them out flat, rolling them and securing the rolls or using rib racks?
