Some folks fix this by rolling up their ribs and then securing them with bamboo sticks or string. Others use vertical rib racks. We like using a pork vertical rib rack because it gives the meat the greatest exposure to the smoke and the heat. It also seems to cook more consistently. Better yet, when using a pork rib rack you can get more racks of ribs on the smoker every time you make them. Each rack equals more ribs and more good eats!
