Weber Smokey Mountain Smoked St Louis Style Pork Ribs

This guy cut off the flap and the top of the ribs to make them even. We’ve done it both ways – cutting off the flap and not. How do you prep your ribs? Which way do you think is best?

It’s really nice to be able to get up to 10 racks smoking at a time. Sounds great to us!
