He cut the brisket in half to allow him to stuff it into the zip lock bag to marinate it. He takes much of the work out of prepping the meats by just marinating them for 12 hours in marinade sauce.
He uses the Cookwell & Company garlic and molasses marinade along with the Allegro Original Marinade. It looks like he uses the whole bottle of the Cookwell & Company marinade for the pork butt and the Allegro Original Marinade for the beef brisket.
